Actually in the database dealer description field among other items is hair color and it could be parsed out with some effort for analysis. My comment was meant to be a bit tongue-in-cheek which your response seems to be also?
There is another factor in this whole science or lack of same that has to be considered. A major casino may get their pick of dealers and only hire young blondes. If their procedure is to deal 65% and shuffle this will skew the statistics. A lesser casino where tokes are low may not get their pick of dealers and have to hire any warm bodies, often older ones. If their procedure is to deal 85% this will skew the statistics.
